Chole bhature

Chole for chole bhature (Chickpea Curry):

Stuff You Need:

To make the chole for chole bhature :

  • 1 cup dried chole (or 2 cans of cooked chickpeas)
  •  3 cups water (if you’re using dried chickpeas)
  •  1 tea bag (if you want, to add color)
  •  Salt to your liking

For the chole masala:

  •  2 spoons of oil
  • 1 big onion, cut into tiny pieces
  • 2 tomatoes, chopped finely
  • 2-3 green chilies, chopped
  • 1 spoon of ginger-garlic paste
  • 1 spoon of cumin seeds
  • 1 spoon of banpati coriander powder
  • Half spoon of banpati turmeric powder
  • 1 spoon of banpati red chili powder (add more or less based on what you like)
  • 1 spoon of banpati garam masala
  • 1 spoon of amchur (it’s dried mango powder)
  • Salt as much as you like
  • Some fresh coriander leaves to make it look pretty
Instructions:

1. Making Chole for chole bhature :

  • If you’re using dried chole (chickpeas), soak them in water overnight or for 6-8 hours.
  • after the gram gets wet, Wash the soaked gram.
  • Now In a pressure cooker, put the soaked chickpeas, water, and salt. Cook until the chickpeas are soft. If you are using canned chickpeas then you can skip this step.

2. Making Chole Masala:

  • Then heat oil in a pan. Put cumin seeds and let them pop.
  • Now add chopped onions and fry until they become golden brown.
  • Then put ginger-garlic paste and green chilies, fry for a minute.
  • Then incorporate the chopped tomatoes and cook until they become tender.
  • Now add all the dry spices – banpati coriander powder, banpati turmeric powder, banpati red chili powder, banpati garam masala, amchur, and salt as per taste. Stir thoroughly and cook until the oil separates from the mixture.
  • Then Add the cooked chickpeas along with water (if you’re using canned chickpeas, add some water).
  • Now let it simmer for 10-15 minutes until the gravy thickens and the flavors mix well.

Bhature for chole bhature (Fried Bread):

Ingredients for making bhatura:

  • 2 cups of all-purpose flour
  • 1/4 cup of semolina
  • 1/4 cup of curd
  • 1/2 teaspoon of baking powder

 

  • 1/4 teaspoon of baking soda
  • 1/2 teaspoon of sugar
  • Salt to your preference
  • Adequate water for kneading the dough
  • Oil for deep frying
Instructions:

1. For Bhatura Dough:

  • Now combine all-purpose flour, semolina, sugar, baking powder, baking soda, and salt in a large mixing bowl. Mix thoroughly.

  • Then knead the dough for 5-7 minutes while it becomes smooth and elastic.
  • Now apply a few drops of oil to the dough, cover it with a damp cloth, and let it rest for 2-3 hours.

2. Frying the Bhaturas for chole bhature :

  • Then after resting, make small lemon sized balls of the dough.
  • Roll each ball into a thin disc, about 1/4 inch thick, using a rolling pin.
  • Now you warm up the oil in a deep frying pan on medium-high heat.
  • Then you can carefully add the rolled bhaturas to the hot oil, one by one.
  • Lightly press each bhatura with slotted spoon to help it to good puff up.
  • Now fry your bhatura until it becomes golden brown and crisp on both sides.

  • Then remove with a slotted spoon and drain excess oil on paper towel.

  • Now, you can serve the chole bhature with hot chole, chopped onions, lemon wedges, green chutney and some curd.
